We prioritise applications from traders who are registered, operation or trading in the Borough of Enfield and demonstrate:
A commitment to using locally produced, seasonal and/or organic ingredients
Environmentally sustainable trading practises by using compostable cutlery, plates or packaging, have processes in place to reduce their food waste and where applicable source ingredients locally)
